
A Healthy Holiday

December is a Holiday Month. We enjoy the holiday spirit, meet friends and family, prepare gifts, and cook delicious meals. At the end of the year, we will realize we gained several pounds. We have a solution to avoid this: mindfulness in our holiday diet.
I am here to offer you a vegetarian/vegan dish to try during the holidays. It is easy to do and has no dairy or wheat, I hope you enjoy and benefit from it.
Healthy/Delicious Holiday Salad, by Dr. Kuhn
(serves 6 to 8 people)
Ingredients:
½ cup Olive Oil
¼ cup Balsamic Vinegar
1/3 cup Apple Cider
1 tablespoon Lemon Juice
½ teaspoon Salt
¼ tsp Black Pepper (freshly ground)
Two large Fuji Apples cut into half-inch cubes
Two Avocados, sliced.
1/3 pound Salad Greens (spring mix, baby spinach, arugula, baby romaine, pick your favorite leaf vegetable)
1/2 cup sliced toasted almonds
8 dates, cut it into small pieces.
Shred two washed carrots.
One Red bell pepper cut to decorate the dish
¼ or ½ cup chopped Onion, depending on your taste
1 Tbsp sesame oil
Directions:
1. Mix all liquid, salt, and pepper into a big mixing bowl.
2. Add the ingredients in the bowl except avocado, half red pepper, and sliced Almond.
3. Divide it into 6 to 8 individual salad bowls.
4. Put sliced avocado and half red pepper on top of the individual servings for decoration of the dish.
5. Sprinkle almonds on top of the individual bowls.
That is it! No cooking or baking; eat with some bread, or potato, or finger foods, or whatever you feel like having.
